Estragon is owned and operated by Julio de Haro and Lara Gavigan. Chef Julio was born and raised in Madrid and his cuisine reflects the fresh simplicity of traditional Spanish fare. Many of the dishes are family recipes, served straight from Abu Luisa's kitchen to your table. Lara, Julio's partner and sous chef, is from Adelaide, Australia. Together, they prepare everything from croquetas to desserts, using fresh ingredients from the most reputable purveyors
To complement Estragon's extensive tapas menu, you'll find a unique cocktail list featuring oft' forgotten classic cocktails, a selection of over twenty local and craft beers, and an all-Spanish wine list with more than 100 references spanning both the country's established and emerging wine regions.
An evening at Estragon is unlike any other dining experience. The space, designed by Lara and Julio, is the culmination of many months of research and shopping! The decor, best described as art deco meets vintage chic, includes vintage furniture, old family photographs and retro relics like their one-of-a-kind disco sangria machine. Estragon provides an inviting, sophisticated setting perfect for any occasion with a main dining room, an intimate lounge, a semi-private dining room and an impressive bar.
